Unlike most shop-bought snacks, these protein-rich nuts and seeds balls have NO refined sugars, NO unhealthy oils, NO diary, NO gluten and NO ingredients you have never heard off. Plus, they are simple to make (no baking required) and taste delicious.
Protein-rich nuts and seeds balls

- 1 Rolling mat
Ingredients
- 3 tbsp flaxseeds ground
- 200 g dates pitted
- 50 g maple syrup
- 50 g pumpkin seeds chopped
- 50 g sunflower seeds whole
- 50 g pistachios chopped
- 50 g walnuts chopped
- 100 g almond butter smooth
- 1 tbsp lemon juice
- 30 g coconut flaxes, sesame seeds or cocoa powder to coat
Instructions
- Mix the ground flaxseeds with 3tbsp of water and allow to stand.
- Chop the dates roughly. You may need to soak the dates in water for 30min if they are too dry.
- In a pan, mix the almond butter with the maple syrup. Add the dates. Cook until the mixture becomes mushy. Add the seeds,chopped walnuts, pistachios and lemon juice. You should get the consistency ofa soft dough.
- Move the dough to a sheet of baking paper. Make a roll the size of a sushi roll.
- Take small pieces and roll them into a small balls (about 30g each). Coat them in coconut flakes or a flavour of your choice.
- Arrange on a serving plate and chill for 30min until firm or keep them in the fridge for up to 5 days.
